Soft Pretzel (Like Auntie Anne's)

Dah lama dok cari resepi ni...jumpa juga di internet..

Resepi Auntie Anne's Pretzel
Ingredients:
1 1/2 cup warm water
1 1/8 teaspoon active dry yeast
2 tablespoons brown sugar
1 1/8 teaspoon salt
1 cup bread flour
3 cups regular flour
2 cups Warm water
2 tablespoons baking soda
to taste coarse salt
4 tablespoons butter (melted)

Directions:
Sprinkle yeast on lukewarm water in mixing bowl; stir to dissolve. Add sugar, salt and stir to dissolve; add flour and knead dough until smooth and elastic. Let rise at least 1/2 hour.

While dough is rising, prepare (soda solution) a water bath with 2 cups warm water and 2 Tbsp baking soda. Be certain to stir often. After dough has risen, pinch off bits of dough and roll into a long rope* (about 1/2 inch or less thick) and shape. Dip pretzel in soda solution and place on greased baking sheet. Allow pretzels to rise again. Bake in 450 oven for about 10 minutes or until golden. Brush with melted butter and enjoy!

Toppings: after you brush with butter try sprinkling with coarse salt. or for Auntie Anne's famous Cinnamon Sugar, try melting a stick of butter in a shallow bowl (big enough to fit the entire pretzel) and in another shallow bowl make a mixture of cinnamon and sugar. Dip the pretzel into the butter, coating both sides generously. Then dip again into the cinnamon mixture. Enjoy!


Caramel Sauce Recipe

Ingredients:
1 cup sugar
6 tbsp butter
1/2 cup heavy whipping cream

Method

1 First, before you begin, make sure you have everything ready to go - the cream and the butter next to the pan, ready to put in. Making caramel is a fast process that cannot wait for hunting around for ingredients. If you don't work fast, the sugar will burn. Safety first - make sure there are no children under foot and you may want to wear oven mitts; the caramelized sugar will be much hotter than boiling water.

2 Heat sugar on moderately high heat in a heavy-bottomed 2-quart or 3-quart saucepan. As the sugar begins to melt, stir vigorously with a whisk or wooden spoon. As soon as the sugar comes to a boil, stop stirring. You can swirl the pan a bit if you want, from this point on. Note that this recipe works best if you are using a thick-bottomed pan. If you find that you end up burning some of the sugar before the rest of it is melted, the next time you attempt it, add a half cup of water to the sugar at the beginning of the process, this will help the sugar to cook more evenly, though it will take longer as the water will need to evaporate before the sugar will caramelize.

3 As soon as all of the sugar crystals have melted (the liquid sugar should be dark amber in color), immediately add the butter to the pan. Whisk until the butter has melted.

4 Once the butter has melted, take the pan off the heat. Count to three, then slowly add the cream to the pan and continue to whisk to incorporate. Note than when you add the butter and the cream, the mixture will foam up considerably. This is why you must use a pan that is at least 2-quarts (preferably 3-quarts) big.
5 Whisk until caramel sauce is smooth. Let cool in the pan for a couple minutes, then pour into a glass mason jar and let sit to cool to room temperature. (Remember to use pot holders when handling the jar filled with hot caramel sauce.) Store in the refrigerator for up to 2 weeks. Warm before serving.
Makes a little over one cup of sauce.

Nasi Beriani Pakistan


Resepi ni telah diajarkan oleh mak mon ...

Resipi Nasi Beriani Pakistan

Bahan A
1 or 2 kg beras basmathi ~ direndam 1 jam, toskan airnya
1 batang tulang rusuk or ekor lembu
200 gm minyak sapi
daun pandan
2 biji bawang besar ~ hiris nipis

Bahan B
2 biji bawang besar ~ belah 4
1 ulas bawang putih ~ ketuk
1 inci halia ~ ketuk

Bahan C
2 camca besar ketumbar biji }
2 camca besar jintan manis biji } ikat dalam kain, tak buat pun tak pe

Bahan D
6 biji pelaga
1 camca besar jintan putih
2 inci kayu manis
4 cengkih
1 bunga lawang
1 sudu besar sajirah ( macam jintan putih) ~ tak letak pun tak apa

Bahan E
1 cawan Yogurt masam / sour cream

Bahn F
10 biji gajus ~ goreng
2 camca besar badam ~ rendam dulu & digoreng
4 biji bawang besar hiris nipis
1 pokok daun ketumbar ~ dihiris

Bahan G
1 tin kacang peas
2 sudu besar kismis oren
1 botol pewarna kuning

Cara:
1. Rebus tulang rusuk/ekor dengan bahan B&C hingga lembut, ketepikan.
2. Asingkan tulang, tapiskan dan ambil airnya sahaja.
3.Tumis 2 biji bawang besar yang dihiris nipis dengan minyak sapi dan daun pandan.
4. Bila dah garing, masukkan D. Bila dah naik bau, masukkan yogurt dan biar garing kejap. Masukkan air rebusan ikut banyaknya beras, 2 sudu besar susu pekat, sedikit garam.
5. Tutup periuk, biar air menggelegak, batu masukkan beras. Biar api besar.
6. Air mesti 1 inci ketats dari lapisan beras yang terendam.
7. Bila air dah kering, padam api.
8. Letakkan tompokan warna kuning telur diatas nasi yang dah masak dalam periuk dan biarkan.
9. Hiaskan dengan bahan F dan G.

NOTA: 1 kg basmathi ~ 4 tin susu
air rebusan ~ 5 tin


AYAM MERAH

Bahan
1 ekor ayam ~ potong 16, goreng dengan kunyit
2 senduk lada kisar
2 batang serai *
1 biji bawang besar *
6 biji bawang merah *
1 ulas bawang putih *
1/2 inci halia *(dikisar)
sedikit sos tomato, kicap pekat manis, garam

Cara

1. Tumis lada dan bahan kisar hingga garing dan pecah minyak.
2. Masukkan sos tomato, kicap dan garam ikut rasa.
3. Tambah sedikit air jika pekat sangat.
4. Biarkan mendidih dan padam api.
5. Masukkan ayam goren dan gaul rata.
6. Hidang bersama bawang goreng dan daun bawang hiris.

Lasagna and Serawa durian



Lasagna saya ni saja je lebihkan cheese kat atas..

Lasagna

Bahan
250gm kepingan lasagna ~ beli yang precooked, tak payah rebus dulu
Parutan cheddar/mozzarella cheese
Red sauce
White sauce

Untuk Red sauce

500gm daging cincang/kisar
2 biji bawang besar ~ potong dadu
2 ulas bawang putih ~ dadu
1 tin kecil tomato puree
sedikit sos tomato
oregano leaves } dalam botol
mixed herbs leaves }
2 keping cheese
garam

Cara utk red sos: sama seperti kuah spaghetti
1. Tumis bawang dadu hingga layu.
2. Masukkan daging cincang, hingga kering airnya.
3. Masukkan tomato puree, sos tomato, oregano & mixed herbs, cheese dan gaul rata.
4. Letak garam ikut rasa.

Untuk White Sauce
600 ml susu segar
3 tbs tepung
sedikit serbuk lada hitam
garam
1 tbs butter

Cara utk white sauce:
1. Panaskan susu dengan tepung sambil digaul hingga sebati, utk elakkan berketul.
2. Masukkan lada hitam dan garam ikut rasa.
3. Masak dengan api perlahan hingga pekat, Sejukkan.

Cara utk LASAGNA
1. Sapukan bekas pembakar dengan butter, dan susun kepingan lasagna dibahagian bawah.
2. Sendukkan sedikit red sauce, ratakan diatas kepingan lasagna tadi, kemudian sendukkan white sauce pula dan ratakan.
3. Taburkan sedikit parutan cheese.
4. Lapiskan dengan kepingan lasagna lagi dan ulang step 2 -3 sehingga habis kepingan lasagna.
5. Untuk lapisan terakhir, selepas kepingan lasagna, ratakan white sauce diatasnya, kemudian taburkan parutan cheddar/mozzarella cheese sehingga menutup semua bahagian white sauce tadi.
6. Bakar pada suhu 180C selama 30~35 minit.
7. Sedap di hidang panas2 bersama sedikit parmeesan cheese.






Layeringnya tak nampak sangat sebab cheese dok meleleh covering the lasagna pieces, red and white sauces..


Serawa Durian

1 mangkuk besar isi durian dengan biji2 sekali (lebih pun tak pe)
1 ketul gula melaka
1 peket santan segar pekat dari 1 biji kelapa~ beli di pasar
garam
3 helai daun pandan
sedikit air

Cara
1. Masak isi durian dengan air hingga mendidih dan lembut isinya.
2. Masukkan daun pandan dan gula melaka, biar hingga gula hancur.
3. Bila telah pekat, masukkan santan dan garam, gaul rata.
4. Padam api bila kuah telah mendidih.

Kuah durian or serawa durian ni sedap dimakan dengan putu mayam , roti or roti jala..Ni special request from orang yang duk asrama, teringin nak makan...kesian anak ibu, macam ngidam pulak..

Rendang Daging






Some of the dishes that I cooked recently. Rendang daging tu tak pedas, sebab lebihkan bawang, even little huzaifah bertambah-tambah makan..I don't eat puyuh, tak sampai hati nak makan. Masak bolehla. The kids and their dad love it...

When I was small, I don't eat chicken..Reason being, I used to help 'abah' my dad when neighbors in my village asked for his help to slaughter chickens for them. I was the helper that has to hold the chicken legs with both hands to keep it still, and 'abah' will slowly slaughter it and will tell me when to release the chicken. I will stand aside and watch, and later on clean all the blood and mess. That's why...kesian tgk ayam tu agaknya...Now I only eat 'ayam sambal' , otherwise..kalau tak de lauk lain, goreng telor je...But the children loves chicken, whatever the dishes are...

Sekarang tengah musim rambutan agaknya. Di pasar tani ada, cik noi balik kampung baru2 ni pun bawa balik rambutan. Tapi yang bestnya...durian tengah banyak la ni. Semerbak baunya..

Mee Rebus






MEE REBUS

Bahan A
10 ulas bawang merah
3 sudu besar cili kisar

Bahan B
Sedikit kepala udang ~ cuci, rebus, lepas tu kisar. Tapis & ambil airnya.

Bahan C
Sebiji keledek oren - saiz agak besar, direbus & dilecek
3 keping asam keping
1/2 kg daging - dihiris tipis
15 ekor udang
100 gm kacang tanah ~ goreng dan tumbuk halus
Gula melaka ~ ikut suka
Garam

Bahan D
Tauge
Tahu - di goreng & di hiris
Telor rebus
Lada hiris
Bawang goreng
Daun bawang ~ hiris
Limau kasturi ~ belah dua


CARA
1. Kisar bahan A, dan tumis hingga garing.
2. Masukkan air kepala udang, biarkan mendidih.
3. Masukkan keledek dan daging hiris, biar sebentar.
4. Masukkan kacang tanah, gula melaka dan garam.
5. Bila hampir pekat, masukkan udang dan asam keping.
