Last hurdle in schooling days




This is for my eldest son who will be sitting for his last SPM paper on 10th dec.

Amir's Birthday


I baked these mini blueberry cheese tarts for my eldest son's birthday last wednesday.





Mini Cheese tarts recipe

Sweet Pastry:
200gm butter 100gm icing sugar
1/4 tsp vanilla essence
1 egg
420gm superfine flour
1 tbsp milk powder

1. Cream butter, icing sugar & vanilla lightly and add in egg, cream till smooth.
2. Add in flour & milk powder, mix till well blended.

Filling:

250gm cream cheese
50gm sugar
25gm butter
1 egg
25gm whipping cream
20gm superfine/cake flour

Topping:
Blueberry pie filling

Method:
1. Press the sweet pastry into the tart mould, prick some holes on the pastry shells.
2. Bake at 190C for 15 minutes.
3. Filling: Cream cream cheese, sugar & butter till light & smooth.
4. Add in egg & cream till well blended.
5. Add in whipping cream, mix till well bined.
6. Fold in flour, mix well.
7. Put the cheese filling into the baked pastry shells.
Put some blueberry pie filling on it and swirl with a chopstick.
8. Bake at 200C for 10-20mins.



Eidul Adha





This is a belated entry. My mixer is back last month, finally. So , the baking starts again, especially with the school holidays and the kids are all at home and always hungry. If the fridge can speak, I wonder what the complaints would be...imagine, there will always be one little head poking in the fridge every single hour I believe and says 'Lapar laa ibu..nak cari makan'.

Assistant in the hospital

My oven is taking a long rest now..My kitchen asistant aka mixer is sent for repair (hospitalised...)
After almost 5 years of heavy usage, not so bad...I have to reject some orders due to this...what to do. But most are willing to wait till my assistant is back and healthy to help in the kitchen..

So for now, i only cook either traditional dishes or simple pizza that does not need heavy kneading..

I am also in the midst of compiling some old recipes collected by an aunt.

Sago gula melaka

300 gm sagu biji
185 gmula melaka
1/2 biji kelapa
3 cawan air
1 cawan air untuk masak air gula
2 helai daun pandan
sedikit garam

Sagu di bersihkan dan tos.
Masak gula dgn air, tapis.
Jerang air bila mendidih, masuk daun pandan & sagu biji, kacau.
Bila hampir masak, masukkan air gula melaka yg telah di masak tadi.
Kacau sampai pekat & tuang dalam acuan kecil.
Dimakan dengan santan pekat yg di tambah sedikit garam.

Sagu manis

2 cawan sagu biji
5-6 cawan air
1 helai daun pandan
sedikit warna merah
1/2 biji kelapa muda parut, di gaul dgn sedikit garam
1/2 cawan gula pasir

Jerang air dgn warna merah & daun pandan sehingga mendidih.
Masukkan sagu yg telah dibersihkan dgn sedikit air, kacau rata.
Bila separuh masak, masukkan gula pasir & kacau rata.
Bila sederhana pekat, tuang dalam loyang & biar keras.
Potong kecil, gaul dengan kelapa parut & hidangkan.

Koleksi Kuih Lama

Ini adalah koleksi resepi dari Mak mon. Kebanyakannya dah dicuba dan sedap..

Kuih Lompat Tikam

2 gelas besar tepung beras
8 gelas besar air pandan
1 tsp kapur sireh

Gaul semua dan jerang atas api perlahan. Kacau jgn berhenti hingga pekat & berkilat. Kalau pekat sangat masukkan sedikit air masak.

Kepalanya.
1 gelas besar tepung beras
6 gelas besar santan pekat
sedikit garam

Gaul semua bahan dalam periuk. Kacau hingga pekat& cantik berminyak.

Air gula:
Gula kelapa
air
pandan

Masak hingga cair & pekat.

Biskut manik

11 oz tpg gandum
7 oz butter
4 oz gula halus
1 tsp baking powder
manik & coklat halus
1 tsp esen ros

Pukul gula & butter. Masuk baking powder & pukul lagi.
Masuk tepung, gaul rata.
Masuk dalam acuan & ratakan.Tekan dgn cutter, tabur manik & bakar.

Biskut Tapak Kuda

6 egg yolk
18 oz butter
12 oz gula halus
25 biji badam
30 oz tpg gandum
6 tsp baking powder
11/2 vanilla

Gaul semua.

Biskut dahlia

1 egg
1 cup sugar
1 cup butter
1 tsp baking powder
2 cup tapung gandum
1 cup tepung jagung

Pukul gula & butter. Masuk telur, baking powder, gandum & tpg jagung.

Kek lapis betawi ~ I used to bake this cake when I was younger & it tasted very good.

30 biji telor
5 biji putih telor
27 oz butter
21 oz gula halus
5 oz gandum
2 oz badam kisar
2 tsp rempah kuih
1 tsp vanilla
1/2 tsp baking powder

Pukul putih telor dgn gula sampai kembang.
pukul kuning telor asing hingga kembang. Masukkan putih telor tadi, pukul lagi sampai kembang.
pukul butter asing sampai kembang.
Masukkan adunan putih & kuning telur tadi, pukul lagi sampai kembang.
tepung, campur dgn baking powder, masuk kedalam adunan telur, vanilla, gaul rata.
Masuk rempah kuih, gaul rata , bakar.

Cara bakar:
sendukkan kedalam acuan dan ratakan lapisan. Bakar dengan api bawah.
Lapisan kedua dibakar dgn api atas.

Kek lapis masam manis

30 biji telor
10 biji putih telor
5 oz gandum
20 oz gula halus
3 buku butter
1 tsp baking powder
1 tsp vanilla
1 tsp ovalet
asam manis secukupnya

1. Pukul putih telur dgn separuh gula sampai kembang.
2. Pukul merah telur dgn separuh lagi gula hingga kembang.
3. Pukul butter dgn ovalet hingga putih.
4. Masukkan adunan merah telur kedalam adunan butter, pukul lagi hingga kembang.
5. Masuk tepung, vanila, gaul rata.
6. Bakar selapis dgn api bawah. susun asam manis diatasnya. bakar lagi selapis dgn api atas.

Cocoa walnuts biscuit

1 cawan butter - 250 gm
1/2 cawan gula halus - 125 gm
1/2 tsp vanilla
2 cawan tepung
2 cawan cornflakes
2 cawan besar cocoa
walnuts potong kasar
cooking coklat secukupnya

Kacau butter, gula & vanila sampai sebati.
Ayak cocoa, masukkan kedalam adunan butter, gaul rata.
Masuk cornflake, tepung, kacau rata.
Masuk kedalam acuan kertas, bakar.
Cairkan coklat, tuang atas cookie, letak potongan walnut diatasnya.

Biskut kelapa sunkist

1 cawan gula halus
1 cawan kelapa kering
2 cawan tpg naik sendiri
125 gm butter
1/2 cawan halwa limau
1 biji telur
sedikit garam
1 tbsp perahan oren
1 tbsp parutan kulitnya

1. Pukul butter dgn gula hingga kembang.
2. Pukul telur berasingan, masukkan kedalam adunan butter tadi, gaul rata.
3. Masuk kelapa, kulit limau dan ir perahan., garam & tepung.
4.Bulat2kan, lekatkan pada halwa limau yg dah dipotong kecil dan bakar.

Raya cookies

Bangkit Semperit

500 gm mentega
1 cawan gula halus
2 tbsp susu pekat
1 tsp vanilla
3 biji telor
3 cawan tepung sagu/tpg ubi - goreng hingga berderai
tepung gandum & kastad - ikut adunan
pewarna merah & coklat jika suka

Cara:

1. Pukul butter dgn gula hingga kembang.
2. Masukkan telor, pukul lagi hingga sebati.
3. Masuk susu, esen vanilla, gaul rata.
4. Masuk tepung, gaul hingga sebati.
5. Terap ikut acuan semperit & bakar pada 170 selama 20 minit.

CORNFLAKE COOKIES

250 gm butter
150 gm caster sugar
2 eggs
1 tsp vanilla essence
240 gm all purpose flour
1 tsp baking powder
60 gm milk powder
180 gm cornflake
60 gm raisins/mixed fruits

1. Preheat oven at 180c
2. Cream butter & sugar till light & fluffy.
3. Add eggs one at a time.
4. Add vanilla.
5. Fold in flour, baking powder, milk powder.
6. Finally add cornflakes & raisins.
7. Bake at 15-20 miutes.

DANISH BUTTER COOKIES

1 1/4 CUP BUTTER
1 1/2 CUP SUGAR
3 egg yolk
2 1/2 cup flour
1 tsp baking soda
1 tsp cream of tartar
1 1/2 tsp almond essence

Cream butter & sugar.
Beat in egg yolk, one at a time.
Add in remaining ingredients. Mix & chill in a covered bowl.
Roll dough into sizes. Press dough with cookie cutter, dipped in sugar.
Bake at 170 for 12 - 15 minutes or till cooked.

BISKUT KACANG

2 CAWAN TEPUNG GANDUM } ayak
1/2 TSP BAKING POWDER }
1 1/2 CAWAN KACANG TANAH - GORENG & KISAR HALUS
1/2 tsp vanilla
1 cawan gula halus
1 kuning telor
minyak jagung - dalm 1 cawan
kuning telor utk sapu

Cara:
1. Satukan tepung, kacang kisar, gula halus, vanilla & kuning telor. Gaul rata.
2. Tuang minyak jagung, sedikit demi sedikit sambil gaul hingga jadi doh yang boleh dicanai.
3. Canai & terap ikut acuan, sapu kuning telur.
4.Bakar at 150C 10-13 minit.

Happy Birthday Zulaikha & Zikry



These are specially ordered cupcakes for the kids. I let them choose which color they wanted.

These cuppies are made using Yellow Cake Recipe from the book Betty Crocker decorating cakes & cupcakes.

Yellow Cake

2 1/2 cups all purpose flour
1 1/2 cups sugar
1/2 cup butter or margarine - softened
1 1/4 cups milk
3 1/2 tsp baking powder
1 tsp salt
1 tsp vanilla
3 large eggs

Method:

1. Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly.
2. Beat on high speed 3 minutes, scraping bowl constantly.
3. Pour batter into baking cups.
4. Bake at 350F for 20 to 25 minutes.

CREAMY WHITE FROSTING - about 3 cups frosting

4 cups icing sugar
1 cup shortening
1/2 tsp clear vanilla or almond extract
2 to 3 tbsp milk

1. Beat powdered sugar & shortening with spoon or electric mixer on low speed.
2. Beat in vanilla & milk until smooth & spreadable.

For a less sweet frosting, I would chose the recipe below which I made for my nephew's wedding recently, but the kids love the above frosting.

White Mountain Frosting -makes about 3 cups frosting

egg whites
1/2 cup sugar
1/4 cup light corn syrup
2 tbsp water
1 tsp vanilla

1. Beat egg whites with mixer on high speed just until stiff peaks form, set aside.
2. In a saucepan, stir sugar, corn syrup & water until well mixed. Cover & heat to rolling boil over medium heat.
3. Uncover & boil 4 to 8 minutes, without stirring, until small amount of mixture dropped into a cup of very cold water forms a firm ball that holds its shape until pressed.
4. Pour hot syrup very slowly in thin stream into egg whites, beating contantly on medium speed.
5. Add vanilla, beat on high speed about 10 minutes or until stiff peaks form.

put the colorings as desired.

Leftovers can be placed in an airtight container and stored in the fridge.

Nasi Kerabu Istimewa (Kerabu Tumis)




Another dish prepared for iftar.

MASI KERABU ISTIMEWA (Kerabu Tumis)

Bahan untuk nasi:

4 pot beras
4 pot air
1 batang serai - di titik
2 inci kunyit hidup - [ tumbuk lumat
sedikit isi cekur - [

Cara masak Nasi:
Beras di bersihkan & di tanak seperti biasa dengan serai, kunyit & cekur tumbuk tadi.

Cara menghidang:

Senduk nasi kedalam pinggan.
Letak sedikit
sambal kelapa, sambal ikan, cilipadi jeruk, tumis budu @ belacan, diakhiri dengan ulam.
Gaul rata2, boleh dihidang bersama lauk seperti solok lada, telur masin, ikan bilis goreng, kacang tanah goreng, keropok, daging bakar, ayam bakar, ikan goreng celup tepung.

Sambal Kelapa

1/2 biji kelapa parut
1 tsp garam
2 tbsp gula merah
5 biji bawang merah - [
sehiris halia [ tumbuk lumat
10 biji lada hitam [

Cara:
Campur semua bahan, sangai atas api kecil (goreng tanpa minyak) hingga agak kering. Tumbuk halus tapi jangan sampai pecah minyak.

Sambal Ikan

5 ekor ikan kembong ( saya guna ikan selar kecil) - dibakar & ambil isinya
5 biji bawang merah
sehiris halia

Cara:

Tumbuk bawang merah, halia, garam & sedikit gula. Masuk isi ikan & tumbuk lagi hingga hancur. Masuk dalam kuali & sangai hingga kering.

Tumis budu @ belacan (salah satu saja)

Bahan;

1 senduk budu @ 2 inci belacan bakar
5 biji cili kering }
5 biji bawang merah } tumbuk lumat
2 biji bawang putih }
sehiris halia }
sebatang serai - titik
sedikit gula merah, garam
1/2 biji kelapa - ambil santan dlm 2 cawan
2 tbsp air asam jawa

Cara:
1. Didihkan santan hingga pecah minyak & pekat.
2. Masuk bahan2 tumbuk, budu @ belacan, serai, gula merah & air asam jawa.
3. Masak lagi hingga pekat & agak kering.

Ulam:

Kesemua bahan ulam dihiris halus kecuali taugeh.

2 helai daun kunyit
5 helai daun cekur
1 tangkai bunga halia@kunyit
10 tangkai daun kesum
5 tangkai daun selasih/kemangi
2 batang kangkung
5 batang kacang panjang
1 kuntum bunga kantan
1/2 biji timun
1 biji bawang besar
5 biji bawang putih jeruk
1 mangkuk kecil tauge - buang ekornya

Solok Lada

10 biji lada hijau, belah jangan sampai putus - buang biji
1/2 biji kelapa parut putih
5 biji bawang merah
sehiris halia
2 ekor ikan kembung - ambil isinya
sedikit garam, gula
1/4 cawan santan pekat

1.Tumbuk bawang & halia hingga lumat
2. Masuk garam, gula & ikan, tumbuk lagi hingga lumat.
3.Campur dalam kelap parut & gaul rata.
4.Sumbat kedalam lada yg telah dibuang biji tadi.
5. Susun dalam periuk, tuang santan pekat & rebus hingga kering.

Ikan goreng celup tepung

5 ekor ikan - bersihkan & toskan
1/2 cawan tepung beras
sedikit air kapur
sedikit serbuk kunyit
garam
minyak

Bancuh tepung beras dgn air kapur, kunyit, garam & air.
Celup ikan dalam bancuhan tepung & goreng.

Note: Hidangan nasi kerabu lebih sedap kalau dihidang dengan budu mentah saja dgm memerahkan sedikit limau nipis kedalam budu & takperlu lagi guna tumis budu@belacan.
Guna kedu-dua sekali pun boleh.

Mee Hailam


We had this for iftar yesterday.

MEE HAILAM

2 peket mee kuning
300 gm daging lembu - hiris nipis
3 ulas bawang putih - tumbuk lumat
sedikit udang - buang kulit saja
sotong - di hiris
1/2 biji capsicum hijau - potong dadu
1/2 batang carrot - hiris nipis
1 biji tomato - belah 8
sedikit sayur sawi putih - asing batang & daun
2 tbsp sos tiram
2 tbsp sos sotong
1 tbsp sos abalone
1 tsp serbuk lada hitam
t tbsp tpg jagung - bancuh dgn 1/2 cawan air
garam
air secukupnya

Cara:

1. Rebus daging dengan 1 inci halia ketuk & 2 ulas bawang putih ketuk hingga empuk.
2. Tumis bawang putih hingga naik bau,asuk sos & serbuk lada hitam, gaul rata.
3. Masukkan daging dengan air rebusannya, didihkan.
4. Masuk carrot biar lembut.
5. Masukkan batang sawi, capsicum, tomato & garam, biar mendidih.
6. Masukkan bancuhan tepung jagung, gaul rata.
7. Masukkan daun sawi.
8. Goreng sebentar mee dengan sedikit minyak & kicap, gaul rata.
9. Hidang mee dalam bekas, & curahkan kuah kedalam bekas mee tadi, hias dengan hirisan daun bawang, cili merah & bawang goreng.
10. Jika suka, boleh di tambah dengan sedikit cili api diketuk & masukkan dalam kuah tadi.

Nasi Arab




This is my first attempt cooking this dish.
The recipe is a mixture of several from the internet, and since I don't have the kabsa spice, I prepared it myself.

The rice and chicken turns out ok, but I think i can lessen the spice in future.
My family loves this rice.


NASI ARAB (KEBSAH RICE)

Bahan:

1 ekor ayam ~ potong 2
3 pot beras basmathi ~ dibasuh & direndam at least 30 minit
sedikit minyak masak & minyak sapi
3 buah pelaga
2 bunga cengkih
1 kayu manis
5 labu bawang merah }
3 ulas bawang putih }
potong dadu
1 bjiji tomato }
1 biji capsicum merah }
2 tbsp tomato puri
1 tbsp rempah kabsa
1 biji lemon zest } parutan kulit luar
1 biji lime zest }
1 batang lobak merah - parut kasar2
sedikit serbuk lada hitam
sedikit kismis
garam
sedikit pewarna kuning telor/saffron
2 biji lada hijau

Cara:

1. Panaskan minyak masak & minyak sapi.
2.Tumis bawang merah & bawang putih hingga wangi .
3. Masukkan kayu manis, bunga cengkih & buah pelaga, goreng hingga naik bau.
4. Masukkan ayam, rempah kabsa, tomato & tomato puri, capsicum, carrot, gaul rata.
5. Masukkan parutan lemon, kismis dan sedikit garam.
6. Masukkan beras & air ikut sukatan beras.
7. Bila nasi sudah separuh masak, masukkan cili hijau.

REMPAH KABSA

1 tsp cardamon seed (biji pelaga)
1 tsp back pepper
1 tsp cumin (jintan manis)

Kisar semua hingga halus.

SOS

250 gm tomato - buang kulit
100 gm daun pudina - ambil daun sahaja
sedikit batang ketumbar
50 gm cili hijau
sedikit garam
perahan lemon

1. Cincang semua bahan & gaul rata atau kisar.

Macaroni & cheese


We had lasagna for breaking fast & 'sahur' last night. The kids had extra helping even though they are sleepy. I found this recipe which is one of my favorites when i was studying abroad back then.

MACARONI & CHEESE

1 (8oz)pack elbow macaroni
1 (8 oz)pack shredded cheddar cheese
1 (12 oz) cottage cheese
1 (8 oz) sour cream
1/4 cup grated parmesan cheese
salt & pepper to taste
1 cup dry bread crumbs
1/4 cup butter - melted

1. Preheat oven to 175C
2. Boil a large pot of lightly salted water, add pasta, cook till done, drain.
3. In 9x 13 baking dish, stir together macaroni, shredded cheese, cottage cheese, sour cream, parmesan, salt & pepper.
4. In a small bowl, mix bread crumbs & melted butter. Sprinkle topping over macaroni mixture.
5. Bake 30- 35 min till top is golden brown.



Pulut Pagi


The first time I tried this dish, was awhile back when having breakfast at a stall in the east cost.
It is a very simple dish, which I often prepared usually for tea in the afternoon.

PULUT PAGI

1/2 kg beras pulut -rendam at least 1/2 jam
2 tangkai daun pandan
500ml air gula melaka
1 biji kelapa parut putih
garam secukup rasa

1. Kukus beras pulut dengan daun pandan selama 30 minit atau 3/4 masak.
2. Setelah sparuh masak, gaul rata dengan air gula melaka.
3. Gaulkan kelapa parut dengan sedikit garam. (kukus sebentar agar tidak cepat basi)
4. Hidang pulut bersama kelapa parut.

Quiche



My elder sister introduce this dish when we had lunch out a while back. Its one of her favorites.

Found this recipe in a recipe book I found in the library. It is just 'awesome'!



Mushroom & Onion Quiche

Pastry case:
Shortcrust pastry

225 gm plain flour } sifted
1/2 tsp salt }
65 gm chilled butter
65 gm chilled vegetable shortening
1 1/2 tbsp cold water

1. Sift & add in chilled butter & shortening, rub in till looks like breadcrumbs.
2. Stir in water till mixture just start to stick together.
3. Rolled dough and lined into a baking dish.
4. Bake at 180C for 10 mins.

Filling mixture
300 ml double cream
3 large eggs
salt & ground black pepper
1 small can of button mushroom - sliced
some sliced onions

Beat eggs lightly, add in cream & pepper. Add in mushroom & onions
Pour into half baked pastry case & bake for 20 mins or till cooked.

I have been busy last week baking cookies for relatives & friends who are going abroad. May you all reached your destinations safely, insya'allah. Hopefully, somebody is happy with these cookies, as this is the least that I can 'courier' without the food getting rotten on the way. Enjoy the cookies!

Mexican Mocha Balls

Ingredients:

1 cup butter
1/2 cup granulated sugar
1 tsp vanilla
2 cups all purpose flour
1/4 cup unsweetened cocoa powder
1 tsp instant coffee crystals
1/4 tsp salt
1 cup finely chopped almonds/walnuts
some icing sugar for dusting

Method:

1. Cream butter, sugar & vanilla till light & creamy.
2. Stir in flour, cocoa, coffee & salt.
3. Gradually, beat (2) into (1).
4. Stir in nuts, mix well. Chill for 1 hour.
5. Form into 1 inch balls.
6. Bake at 175C for 20 minutes or middle is crisp.
7. While warm but not hot, dust with icing sugar.



Biskut Suji Badam

1 kg tepung gandum
350gm badam kisar
400 gm gula icing
1 tsp baking powder
1 tsp soda bicarbonate
secubit garam
minyak jagung secukupnya

1. Masukkan semua bahan kedalam bekas kecuali minyak, gaul rata.
2. Masuk minyak sedikit2 hingga jadi doh yang boleh di terap.
3. Bakar pada suhu 170C selama 20 minit.

Rainbow cookies


Cookie ni sedap. The kids lovee them, colorful agaknya.

Recipe pun dari aunty yochana's blog, a singaporean.

Rainbow cookies

100 gm butter
60 gm ghee
80 gm sugar - i used castor sugar
50 gm egg - 1 medium sized egg
250 gm plain flour
30 gm custard powder
1/4 tsp salt
1 tsp baking powder
1 tbsp milk powder
60 gm ground almond
pink & orange coloring
some fine sugar

1. Cream butter, ghee, sugar & salt till light and creamy.
2. Add in beaten eggs & the rest of the ingredients except coloring.
3. Divide into 3 parts, orange, pink & plain
4. Roll & toss in fine sugar & place in small paper cups.
5. Bake at 160C for 20 minutes or till cooked.


rolled beef lasagna

resepi nya sama je macam lasagna biasa, cuma presentation je lain and rasanya lagi senang nak buat..
Lepas dah lembutkan lasagna pieces tu, isi sedikit daging cincang dari red sauce, and gulung macam popiah. Then susun dalam bekas, tuang red sos then tuang white sauce. Saya letak metball sekali dalam red sauce. Lepas tu atas susun cheese. bake macam biasa.
Red sauce kena banyak sikit so that nak tenggelamkan rolled lasagna tu.
Anak-anak suka.

ni belum masak..nampak tak, lasagna tu dah tenggelam dgn red sauce, atas tu white sauce, belum letak cheese lagi.



ni huzaifah punya..dia suruh ibu ambil gambar mangkuk dia..dah 3 helping tu....

Baru lepas nangis...enjoying his cookie


Many other shapes too....other than gingerbreadman

My youngest has been pestering me to bake gingerbreadman cookies. He saw the gingerbreadman cookie cutter i bought recently and plus the fact that this 'gingerbreadman' is one of the cartoon that appears in the online learning that he frequently selected.

I used the pressed cookie recipe that i found from the internet at Aunty Yochanas blog, to make this cookie. The last cookie batch was pressed by Alya, zulaikha & huzaifah, and they enjoyed themselves very much. First time 'ibu' allowed them to have ago at cookie making...part of learning process...

Here's the recipe: a very easy recipe

Pressed cookie shortbread

120 gm plain flour
60gm rice flour
60 gm castor sugar
120 gm butter
1 tsp almond essence
1 tbsp fine sugar - for sprinkling

Mix all ingredients together. Do not overwork kneading dough.
Knead lightly and make into small balls. Press with cookie cutter.
Sprinke with sugar.
Bake at 160C for 15 minutes or till cooked and crispy.

This is a belated entry for another batch of cupcakes for Alya's 7th birthday. My kids are asking me to make Upin & Ipin's cupcakes decoration. I have seen one in a bake shop, but it is for bigger cakes..cannot fit my little cutie cup cakes...think I'll make some before ramadhan..

Traditional vs modern cooking

In this entry, I have several backdated recipes to share, modern and traditional recipes...could not make time to post earlier...my schedule is very tight compared to when I had a 9-5++ job before. But I loveed it anyway...

This cheesecake recipe is taken from the book Favourite Cupcakes and cheesecakes. The kids and me love both cakes. Dear hubby just eat whatever is served on the table...he's gaining weight by the look of it though...


Cheesecake Cookies

Base
70gm butter, softened
1/2 cup brown sugar, packed
1 cup plain flour

Filling
1/2 cup sugar
250gm cream cheese (1 packet), softened
1 egg
2 tbsp milk
1 tbsp lemon juice
1/2 tsp vanilla extract

1. Preheat oven to 180C.

BASE

2. In a medium bowl, blend butter, brown sugar, and flour with a fork until mixture resembles coarse crumbs.
3. Put 1 cup of the mixture aside for topping. Press remaining mixture into a 20X20X5 cm baking dish, bake for 15 minutes. Remove from oven and allow to cool.

Filling

4. In another bowl, combine sugar and cream cheese, mixing until smooth. Thoroughly beat in egg, mil, lemon juice and vanilla. Spread over the baked base and sprinkle with remaining brown sugar mixture. Bake for 25 minutes or till cooked. Cool, then chill for at least 1 hour. Cut into squares.

Marble Chocolate cheesecake

Resepi kak Liza , dia ni memang terror masak..

Bahan A
180gm butter
170gm gula castor
3 biji telor
20gm serbuk koko ]
120gm tepung superfine ] di ayak bersama
1 tsp baking powder ]

Bahan B
250gm cream cheese, pada suhu bilik
60 gm gula castor
1 tsp vanilla esen
1 biji telor

Cara:

1. Panaskan oven pada suhu 160C.
2. Putar butter dengan gula hingga putih, perlahankan mixer, masukkan telor satu persatu. Putar laju hingga gula kembang dan hancur.
3. Masukkan tepung sedikit demi sedikit hingga habis, gaul rata.
4. Dalam bekas yang lain bersih dan kering, masukkan cream cheese, gula dan vanilla, putar hingga sebati.
5. Masukkan telur dan putar lagi hingga gula hancur dan adunan berkrim.
6. Tuang 1/2 adunan coklat kedalam loyang 8x8x3 yang telah dilenser.
7. Tuang semua adunan cream cheese dan ratakan.
8. Tuang baki adunan coklat dan ratakan.
9. Bakar 40-45 hingga masak. Biarkan sejuk sebelum dipotong.



Kuih Abok-abok

My late mum used to cook this kueh when I was small. I loved this kueh. My next attempt will be kuih lopes.

Bahan:
2 cawan sagu putih
1.5 cawan kelapa parut putih
1.5 cawan gula merah ( yang macam gula tebu tu)
sedikit garam
daun pisang

Cara:

1. Basuh sagu dan rendam dalam 5 minit, toskan airnya.
2. Gaul sagu, kelap dan garam ikut rasa.
3. Daun pisang, di potong segi empat tepat dan layukan atas api sebentar agar senang di bentuk.
4. Bentukkan daun pisang menjadi kon.
5. Masukkan 1.5 tbsp campuran sagu tadi kedalam kon.
6. Masukkan 1 tsp gula merah keatas sagu, dan masukkan lagi sedikit sagu keatas gual merah.
7. Gulungkan kon dengan kemas dan lipat hujungnya.
8. Kukus selama 30 minit atau hingga masak.


Pau

Resepi ni pun dapat dari mat gebu, memang lembut dan gebu.

Bahan:
240 gm tepung pau/hongkong/waterlily
1 tsp Double-action baking powder - ada dijual di kedai bhn kek
1 tsp yis
1/2 tsp garam
25 gm lemak sayur/shortening
100 ml air suam - saya lebihkan sikit kerana adunan agak keras ]
30gm gula halus ]
1/2 tsp cuka ] satukan, kacau sebati
Inti kacang merah

Cara:
1. Satukan tepung, yis, garam dan baking powder, gaul rata.
2. Tuang air yang di campurkan cuka tadi perlahan-lahan, gaul rata hingga jadi doh.
3. Masuk lemak sayur, uli lagi hingga doh jadi lembut dan kenyal.
4. Biar doh naik (dlm 45 min).
5. Bulat2kan doh, isi inti, lapik dengan kertas minyak /daun pisang. Sapu dengan lemak sayur. Rehatkan 25 minit.
6. Kukus selama 15 minit hingga masak.


Ni saje je test buat cupcakes dengan whipped cream deco.

Laksa Nyonya



I have some fishballs in the fridge that needs to be cleared before they expired. This dish comes up in my mind, as it uses fishballs. I got the recipe from Myresepi.net shared by Kak fida.

Laksa Nyonya

Bahan:(8-10 orang)

15 tangkai cili kering
20 ulas bawang merah
4 ulas bawang putih
5 biji buah keras
1/2 inci kunyit hidup
4 batang serai
1/2 cawan udang kering
(kisar semua bahan diatas)

1/2 kg udang hidup - kupas kulitnya
1.5 liter santan dari 1 biji kelapa
sedikit garam
6 helai daun kesom
2kg mee - celur
250g tauge - buang akarnya
5 keping tauhu goreng - potong kecil
20 fishball & fishcake - hiris
5 biji telur rebus - belah 2
sambal tumis
minyak

Cara:
1.
Tumis bahan kisar hingga garing.
2. Masuk udang hidup, gaul rata.
3. Masuk santan, tauhu, fishball, 1/2 daun kesum, garam, biar mendidh.
4. Hidang bersama telur rebus, hirisan daun kesum dan sedikit sambal tumis.



Dadih ni buat masa cuti sekolah tempohari, tapi tak sempat nak update.
Resepi dapat dari mak mon.

Dadih

Bahan:

1 peket non-dairy creamer powder - 450gm(coffee mate boikot ye..)
air dalam 34/35 cups
4.5 cups gula
25gm agar-agar kering
4 cawan air

Cara:
1. Masak agar-agar dengan 34 cawan air hingga hancur.
2. Masukkan gula. Bancuh creamer dengan 4 cawan air, tuang ke dalam larutan agar-agar tadi.
3. Biar mendidih sebentar, padamkan api.
4. Letak perasa ikut pilihan.
5. Isikan kedalam bekas dan sejukkan. Boleh di tambah nata de coco ikut selera.




Anak-anak suka mihun ni sebab tak pedas. Di hidang bersama sedikit sambal kicap cili api + bawang putih tumbuk, bersama perahan limau kasturi untuk yang nak pedas. Resepi asal ni dapat dari koleksi resepi diana.

Mihun Singapore

Bahan:

1 bungkus mihun
1 batang lobak merah, dihiris halus
1 ikat sawi, dibersihkan, potong kecil
200 gram daging cincang
12 ekor udang, dibersihkan
3 biji telur
½ cawan air
Bawang goreng secukupnya
Garam secukup rasa
Minyak untuk menumis

Bahan untuk dikisar
3 biji bawang besar
6 ulas bawang putih
½ cawan udang kering, dicuci bersih
1 sudu teh serbuk lada putih

Cara-caranya
1. Rendam mihun hingga lembut. Angkat dan toskan. Telur digoreng dadar. Angkat dan hiris panjang.
2. Panaskan minyak dan tumis bahan yang telah dikisar sehingga naik bau. Masukkan daging cincang, lobak dan air. Kacau rata.
3. Bila daging telah masak, masukkan udang, garam dan sayur sawi. Gaul sebati.
4. Masukkan mihun. Gaul kesemua bahan-bahan sehingga ia sebati. Angkat dan hidangkan dengan cili jeruk/ cili kicap, bawang goreng, daun sup dan hirisan telur dadar.




Seafood pizza is the kid's favorite. We can be creative with the topping. But i sometimes just sprinkle some sausage slices or fried minced beef with some slices of onions and mushrooms.

PIZZA BASE

1 peket yis ] larutkan bersama
1 tsp gula ] dan biar berbuih
1 cup air suam ]
3 cawan tepung *
1 tbsp minyak *
1/2 tsp garam*
1 cup air*

Cara:

1. Campurkan semua bahan * ke dalam mangkuk besar , dan tuangkan larutan yis kedalamnya.
2. Uli hingga menjadi doh yang tidak melekat di tangan.
3. Rehatkan doh , biar naik dua kali ganda.
4. Uli sebentar, bentuk doh mangikut acuan pizza.

Untuk topping:

1 tin kecil tomato paste
sedikit minyak
shredded cheese
thousand island sos
filamen ketam - potong kecil
1 tin tuna flakes - keringkan minyaknya
sedikit oregano flakes & mixed herbs

1. Campurkan tomato paste dengan oregano & mixed herbs, gaul sebati.
2. Ratakan sedikit minyak keatas permukaan pizza base yang telah di bentuk tadi.
3. Sapukan campuran tomato paste.
4. Taburkan filamen ketam dan tuna flakes.
5. Picitkan sedikit sos thousand island ke atas topping.
6. Taburkan cheese.
7. Bakar pada 200c selama 15 minit.

Bakso


Mee bakso ni asal dari indonesia. Dulu, yum rajin buat untuk breakfast before pergi kerja, tu yang bertambah tembam. Sekarang, sendiri buat je la. Resepi ni dah di modify dari beberapa resepi yang jumpa di internet.

RESEPI BAKSO

Bahan: (7-8 orang)

1 bungkus mee kuning/ mee hoon
tauge

Untuk bebola:
400 gm daging cincang
2 biji bawang merah - cincang halus
2 biji bawang putih - cincang halus
2 sudu besar telur (1/2 biji)
1 tsp tepung ubi/jagung
sedikit lada sulah, garam

Untuk kuah:
3 biji bawang merah - hiris
3 ulas bawang putih } di tumbuk
1/2 inci halis } halus
1 tsp lada sulah biji }
1 batang serai - ketuk
1 tbs pati daging/ayam - saya guna air rebusan daging/ayam je
serbuk lada sulah
garam, kicap manis

1. Tumis bawang merah hingga kuning.
2. Masuk bahan tumbuk hingga garing & naik bau.
3 Masukkan serai, gaul sebentar, masukkan air, pati daging, lada sula, sedikit kicap manis & garam.
4. Bila mendidih, masukkan bebola daging tadi.
5. Bebola daging timbul bila dah masak.

Untuk Fried wonton:

1 cawan all purpose flour
1 tbs butter
1 egg
water, salt

Mix all to form a dough. Roll the dough thinly and cut square, 2" x 2"
Fry till brown.

Untuk menghidang:
Sos cili
Sayur baby bok choy
daun sadri/bawang
bawang goreng
kicap manis dengan cili api tumbuk
fried wonton
telur rebus - belah dua
tauge
tauhu goreng - dihiris

Kek Prune Kukus





I made two of these cakes for ira and ada's wedding recently, to serve the guests at the kitchen. I like this cake because of the taste and especially because of the simple recipe. Main campak-campak aje...

Resepi ni pun dapat dari internet but i lost track of the owner sebab duk catit kat buku rojak ku. Anyways, kalu the owner jumpa mekasih ya kerana sudi kongsi resepi jadi saya pun panjang-panjangkanlah ilmu ni...

KEK PRUNE KUKUS

Bahan:

250 gm butter
2 cup self raising flour
1 cup sugar (or 1/2 cup brown sugar + 1/2 cups castor sugar)
1/4 tin besar susu pekat
20 biji pitted prune (kisar dgn sedikit air ~ 2 camca besar air)
5 biji prune - hiris kasar
5 biji telur
1 tsp ovalette
tin kek 9" x 9"

Cara:

1. Didihkan air di kukusan.
2. Beat butter+ gula+susu pekat.
3. Masukkan telur satu per satu dan putar lagi.
4. Masukkan ovalette dan gaul lagi hingga rata.
5.Masukkan prune kidar, gaul rata.
6. Masukkan tepung sedikit-sedikit, gaul dengan senduk hingga sebati.
7. Masukkan prune hiris dan gaul rata. Tuang ke dalam loyang , pastikan adunan separuh dari bekas.
8. Kukus 1 1/2 jam hingga masak. ( Tutup tin kek dengan aluminium foil untuk elakkan air menitis ke atas kek.)


Teringat masa di mrsm dulu, bila lepas cuti semester, roommate bawa balik sambal ni ke asrama. Sebelum ni cuba buat tapi selalu tak rangup bilisnya. Sekali tu jumpa satu makcik jual, beli satu bekas macam isi tofufa tu, RM10, bilis campur kacang tanah goreng, rangup tak lemau bilisnya. Test 2-3 kali, jadi juga akhirnya. Rupanya, letak bawang goreng aje, kalau letak bawang hiris dalam tumisan cili kisar tu, alamat la bilis tu nanti tak rangup.


Sambal Ikan Bilis Kering

Bahan:

1/2 kg ikan bilis jepun - bersihkan
sesenduk cili mesin
sesenduk bawang goreng
sediikit gula & garam

Cara:
1. Goreng ikan bilis dengan api sederhana hingga garing. Toskan minyaknya.
2. Tumis cili mesin dengan api perlahan hingga garing/ pecah minyak.
3. Masukkan gula dan garam ikut rasa, gaul rata.
4. Sejukkan tumisan cili tadi.
5. Maukkan ikan bilis goreng dan bawang goreng kedalam tumisan cili tadi, gaul rata hingga semua bilis bersalut cili.
6. Masukkan kedalam bekas kedap udara, boleh tahan lama.

Berbudi pada tanah


Walau jarang masak kari, tapi banyak lagi kegunaannya. Untuk hilangkan bau mulut or ape-ape masa'alah gusi. Kunyah 3-4 helai daun, lepas tu kumur.


Ni pokok kacang yg tak memanjat, dapat benih dari jiran. Tp bijinya agak besar sikit compared to kacang biasa. Next project nak tanam kacang panjang biasa, benih dah ada org bagi..Dalam pasu jugak le...tapi kena sediakan tempat utk dia panjat..

Sekarang ni kebun yang sekangkang kera kat belakang rumah tu dah ada hasil dah, boleh laa.. Walau pun semuanya dalam pasu and plastic containers yg recycle, sekurang-kurangnya kalau nak petik ajelah...Dulu masa masih bekerja, tak done nak belek-belek pokok, harapkan maid aje...bila sekali-sekala jenguk, alahai...banyak yg dah jadi keriput...nazak dah.. Sekarang ni, since dah jadi big bos sendiri...tukang kebun pun sendiri apalagi supir, suka tengok pokok-pokok tu hidup segar bugar...

Ada ulam raja, daun ceylon, cekur, tenggek burung, daun kaduk. Kebunherba pun ade, oregano, dill. Tanam yg selalu guna aje...Limau kasturi lebat sungguh buahnya, limau purut je..tak keluar buah..heran gak. Tengok kak munah punya kat kg banyak buah. Baru-baru ni dapat beli temu putih, temu pauh, halia bara, kunyit hitam kat pasar tani karnival. Dah keluar tunas-tunas kecil, best betul. Nak beli anak pokok, aduhai kusss...semangat, mahal uuuuu.... Baik beli isinya dan semai sendirik...lagi murah...baja organik lagi..

Kat depan tanam bunga-bunga yang mengeluarkan bau, sedap dan wangi. spt kenanga, honeysuckle, melur, gardenia, kesidang, jasmin..Sekarang tgh collect roses kampung, ambik anak kat kg. Rose putih belum dapat lagi..Oh ya...pokok mulberi pemberian kawan dari perak pun dah berbuah dan jambu air hijau pun lebat sungguh walaupun dalam pasu je...pokok jambu air vietnam baru beli tapi belum ada hasil lagi.
