Cocoa Brownies

I had a request for some brownies yesterday. Made a few and had some left for the kids. The brownies are fudgy in the middle and chewy on the outside, with a shiny, crackly top. The browned butter adds a rich nutty flavor. The original recipe was from a magazine "VALENTINE DESSERTS bon appetit".  The recipe was declared as the best ever brownies, and with a "warning: you will eat the entire tray". No wonder huzaifah keeps returning for more....very chocolatey as i added some choc chips, and some ground hazelnut.

COCOA BROWNIES with BROWNED BUTTER and WALNUTS

142 GM BUTTER ~ cut into 1 inch pieces
1 1/4 cup sugar ~ i reduce to 1 cup
3/4 cup natural unsweetened cocoa powder
1 tsp vanilla essence
2 large eggs, chilled
1/3 cup plus 1 tbsp all purpose flour
1 cup walnut pieces

1. Preheat oven to 160C.
2.  Line 8x8x2 inch baking pan witk baking paper.
3. Melt butter in mdeium saucepan over medium heat.
4. Continue cooking until butter stops foaming and browned bits form at bottom of pan, stirring often, about 5 minutes.
5. Remove from heat, immediately add sugar, cocoa, 2 tbsp water, vanilla, and 1/4 tsp (generous) salt. Stir to blend. Let cools 5 minutes (mixture will still be hot).
6. Add eggs to hot mixture 1 at a time, beating vigorously to blend after each addition.
7. When mixture looks thick and shiny, add flour and stir until blended.
8. Beat vigorously 60 strokes.
9. Stir in nuts. Transfer batter to prepared pan.
10. Bake until toothpick inserted into center comes out almost clean ( with a few moist crumbs attached), for about 25 minutes, depending to your oven. Cool in pan.

Durian and more..

 Salam pagi Jumaat.

Ni ada lebih sikit isi durian yang lebih di buat kuah durian.Pulut pun ada lebih sikit, di kukus semangkuk je. Yang kuat makan semua takde kat rumah. Ada budak kecik tu suka makan kuah durian dengan roti.Boleh hirup lagi tu..

 











Biskut ni nampak sedap, lagi-lagi ada almond, my favorite.

MELTING ALMOND


Bahan - bahan:
  • 180gm shortening
  • 150 gm serbuk badam ( almond powder)
  • 120 gm almond flakes ( disangai dan diramas sehingga hancur)
  • 120 gm gula aising
  • 1/4 sudu kecil garam
  • 200 gm tepung gandum
  • 80 gm tepung jagung



Cara Membuatnya:
  1. Almond flakes disangai dan kemudian diramas sehingga sedikit hancur
  2. Kemudian, pukul shortening dan gula icing dengan mixer sehingga  berkrim dan kembang.
  3. Masukkan sedikit demi sedikit tepung, tepung jagung,serbuk badam, dan juga almond flakes yg telah dihancurkan tadi.
  4. Sejukkan adunan di dalam peti sejuk selama 15 minit. Kemudian bentukkan mengikut corak kesukaan anda.
  5. Bakar doh pada suhu 150 darjah selama 30 minit bergantung kpd oven masing2.
  6. Sejukkan cookies ini sebelum dialihkan di dalam container

Musim buah di kampung

Weekend baru ni, kami pulang ke kampung meraikan kenduri kawin Raihan di Teluk Mas, Melaka. Lepas makan, terus pulang ke Muar, berkampung di rumah Bang Mat. Ada pulak birthday party anak2 ariza & adliah. So, kira langkah kanan la kan. Esoknya sarapan dengan lodeh, sate, putu piring dan macam-macam lagi. Anak-anak seronok dapat balik rumah pak ngah, jumpa geng2 mereka.

Entry kali ni tak de resepi ek...Cuci mata je..



On the way balik dari BP, lepas hantar pengantin, beli sikit buah2. Semerbak kereta bau durian.

Apam Comel


Dah lama tak makan apam. Jumpa resepi ni di SINI and pasti anak-anak suka. Dah nak dekat bulan ramadhan ni, boleh la buat untuk buka puasa nanti. Inti boleh di pelbagaikan i.e blueberi ke , jem kaya ke..ikut citarasa...Kali ini saya buat inti blueberry.














APAM COMEL INTI KELAPA

Bahan-bahan

3 biji telor  ~ dari peti sejuk
275 gm tepung gandum/ kek
220 gm gula halus
150 gm susu segar
3 tsp baking powder
1 tsp ovallette

Untuk Inti Kelapa:
kelapa parut putih
gula melaka/manisan
1 tsp tepung jagung ~ bancuh dengan 1 tbsp air
2 helai daun pandan

Cara:
1. Masukkan semua bahan apam dalam mangkuk besar.
2. Pukul dengan mixer pada kelajuan maksima selama 6-8 min.
3. Bahagi kepada 3 mangkuk dan warnakan.
4. Masukkan kedalam piping bag yang berasingan,
5. Pipe kan sedikit kedalam mangkuk kertas yang kecil.     
6. Masukkan sedikit inti kelapa.
7. Pipekan lagi adunan yang berlainan warna sehingga paras mangkuk kertas 3/4 penuh.
8. Kukus dalam kukusan yang telah dipanaskan selama 10 ~ 15 min.

 
 

Banoffee Pie

My youngest requested for this pie for quite some time and only now I managed to make it. Usually, the kids do not like any desserts with banana in it, but this comes out as a big hit for everyone.
A very simple dessert to make. Original recipe from HERE.

BANOFFEE PIE


1 pie crust ~ I just used digestive biscuits and butter
2 bananas
100 ml milk
4 tbsp caster sugar
300 ml cream
1 tbsp coffee essence
2 bananas, extra
100 gm block of dark chocolate/ choc chips


1. Blend the 2 bananas with the milk until well combined and smooth.
2. In a pan, over high heat, melt the caster sugar. Don't stir it, just gently tilt as it melts to dark caramel color.
3. Add the banana milk mixture to the toffee. Stirring until the toffee melts back into the bananas.
4. Pour into the pie case and freeze for 20 minutes. (or just put it in the fridge if you do not need it within 30 minutes).


For the topping:
1. Whip the cream and then fold through the coffee essence so it leaves pretty swirls in the cream.
2. Slice the bananas and arrange over the pie filling, the spoon the cream over the top.
3. Scrape the chocolate block using a knife or a chcolate/cheese grater to make chocolate curls. Arrange over the top of the cream.
4. Ready to be served! 

For the crust:
1. 150gm digestive biscuits ~ crushed
2. 65 gm butter ~ melted
3. Mix butter into the biscuits crumbs little by little until the crumbs really hold together.
4. Butter the bottom and sides of your pan/ dish.
5. Press mixture into pan, Bake for 10 minutes at 170C.

Apam Perlis

APAM PERLIS

Bahan:
300 gm tepung gandum
1 biji telor
secubit garam
sedikit pewarna hijau
air pandan secukupnya
1 tbsp garam eno
300 gm kacang tanah ~ goreng & tumbuk

Cara:

1. Campurkan semua bahan keculi kacang & eno hingga sebati dengan kepekatan seperti pancake.
2. Masukkan eno.
3. Panaskan non-stick pan, lenserkan dengan minyak, masukkan dua sudu adunan, tutup.
4. Bila dah masak, angkat, taburkan kacang dan isi inti & lipat.

Finger Foods for the kids

I found these recipes while blog hopping for some sewing ideas..They are great for the little ones..in bite sizes

The recipes below are modified to cater fo halal ingredients:

Mushroom Bite Size Quiche

1/2 cup of ground beef
1/4 lb fresh mushrooms ~ chopped
1 tbsp butter
1/3 cup chopped big onions
1 - 2/3 cup shredded swiss cheese
Pastry for double crust pie
5 eggs
1-2/3 cups sour cream

1. Heat oven to 180C.
2. On a lightly floured board, roll out the pastry dough 1/16 inch thick.
3. Using a 3 inch cutter, cut out 42 circles, re-roll scraps as needed.
4. Fit circles into bottoms and slightly up sides of lightly greased 2 1/2 in muffin pans.
5. Fry ground beef until crisp, drain.
6. Sauteed chopped mushrooms in butter until limp and dry.
7. Combine ground beef,  mushroom, onions & cheese.
8. Divide filling equally among muffin cups.
9. Beat eggs, add sour cream & stir till smooth.
10. Spoon about 1 tbsp into each muffin cup.
11. Bake till puffed & light brown, 20-25 mins.

BEEF BITES

  • 3/4 cup flour + 1/2 cups for flouring your muffin tin
  • 3/4 teaspoon baking powder
  • 3/4 cup whole milk
  • 1 egg, lightly beaten
  • 1 1/2 cups colby-jack cheese, shredded
  • 1 small roma tomato, diced
  • 1/2 cup groud beef, sauteed till crisp.
  • 1/4 cup chopped spinach
  • A pinch of salt & lots of coarse ground black pepper
  • Ranch Dressing for Dipping
1. Preheat the oven to 170 C. 
2. Spray a mini-muffin tin with a generous layer of non-stick cooking spray, then sprinkle a generous layer of flour. Tap the muffin tin to remove any excess flour. 
3. In a large bowl, stir together the flour, baking powder, milk, and egg until a thin batter forms. 
4. Stir in the remaining ingredients (except for the ranch dressing!) and spoon into your greased muffin tins. 5. 5. Bake immediately in a preheated oven for 10-20 minutes, or until puffs are golden brown and cooked through. 
6. Remove from the oven and cool slightly before serving. Serve with Ranch dressing for dipping. Enjoy!
