Last hurdle in schooling days




This is for my eldest son who will be sitting for his last SPM paper on 10th dec.

Amir's Birthday


I baked these mini blueberry cheese tarts for my eldest son's birthday last wednesday.





Mini Cheese tarts recipe

Sweet Pastry:
200gm butter 100gm icing sugar
1/4 tsp vanilla essence
1 egg
420gm superfine flour
1 tbsp milk powder

1. Cream butter, icing sugar & vanilla lightly and add in egg, cream till smooth.
2. Add in flour & milk powder, mix till well blended.

Filling:

250gm cream cheese
50gm sugar
25gm butter
1 egg
25gm whipping cream
20gm superfine/cake flour

Topping:
Blueberry pie filling

Method:
1. Press the sweet pastry into the tart mould, prick some holes on the pastry shells.
2. Bake at 190C for 15 minutes.
3. Filling: Cream cream cheese, sugar & butter till light & smooth.
4. Add in egg & cream till well blended.
5. Add in whipping cream, mix till well bined.
6. Fold in flour, mix well.
7. Put the cheese filling into the baked pastry shells.
Put some blueberry pie filling on it and swirl with a chopstick.
8. Bake at 200C for 10-20mins.



Eidul Adha





This is a belated entry. My mixer is back last month, finally. So , the baking starts again, especially with the school holidays and the kids are all at home and always hungry. If the fridge can speak, I wonder what the complaints would be...imagine, there will always be one little head poking in the fridge every single hour I believe and says 'Lapar laa ibu..nak cari makan'.
