BANANA CHOCOLATE CHUNK MUFFIN

BANANA MUFFIN RECIPE

Ingredients:
1 cup dark chocolate chunks/chips
1 3/4 cups plain flour
1/2 cup granulated white sugar
1 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
1 tsp ground cinnamon
2 large eggs, lightly beaten
1/2 cup (113 gm) unsalted butter ~ melted & cooled
3 ripe bananas (454 gm) ~ mashed  to about 1 1/2 cups
1 tsp vanilla

Method:
1. Combine all dry ingredients in a bowl. Chocolate chunks, flour, sugar, baking powder, baking soda, salt & cinnamon.
2. Combine all wet ingredients in another bowl. Egg, melted butter, bananas & vanilla.
3. Gently fold the wet ingredients into dry ingredients until just combined. Batter will be thick & chunky. Do not overmix batter. You DO NOT want a smooth batter.
4. Spoon batter into prepared muffin cups/tins.
5. Bake at 160C for 20-25 mins or until cooked.
6. Cool the muffins for 5 mis before removing from the pan.
