The recipes below are modified to cater fo halal ingredients:
Mushroom Bite Size Quiche
1/2 cup of ground beef
1/4 lb fresh mushrooms ~ chopped
1 tbsp butter
1/3 cup chopped big onions
1 - 2/3 cup shredded swiss cheese
Pastry for double crust pie
5 eggs
1-2/3 cups sour cream
1. Heat oven to 180C.
2. On a lightly floured board, roll out the pastry dough 1/16 inch thick.
3. Using a 3 inch cutter, cut out 42 circles, re-roll scraps as needed.
4. Fit circles into bottoms and slightly up sides of lightly greased 2 1/2 in muffin pans.
5. Fry ground beef until crisp, drain.
6. Sauteed chopped mushrooms in butter until limp and dry.
7. Combine ground beef, mushroom, onions & cheese.
8. Divide filling equally among muffin cups.
9. Beat eggs, add sour cream & stir till smooth.
10. Spoon about 1 tbsp into each muffin cup.
11. Bake till puffed & light brown, 20-25 mins.
BEEF BITES
- 3/4 cup flour + 1/2 cups for flouring your muffin tin
- 3/4 teaspoon baking powder
- 3/4 cup whole milk
- 1 egg, lightly beaten
- 1 1/2 cups colby-jack cheese, shredded
- 1 small roma tomato, diced
- 1/2 cup groud beef, sauteed till crisp.
- 1/4 cup chopped spinach
- A pinch of salt & lots of coarse ground black pepper
- Ranch Dressing for Dipping
1. Preheat the oven to 170 C.
2. Spray a mini-muffin tin with a generous layer of non-stick cooking spray, then sprinkle a generous layer of flour. Tap the muffin tin to remove any excess flour.
3. In a large bowl, stir together the flour, baking powder, milk, and egg until a thin batter forms.
4. Stir in the remaining ingredients (except for the ranch dressing!) and spoon into your greased muffin tins. 5. 5. Bake immediately in a preheated oven for 10-20 minutes, or until puffs are golden brown and cooked through.
6. Remove from the oven and cool slightly before serving. Serve with Ranch dressing for dipping. Enjoy!
