Puding Raja


Sekarang ni cuaca di sini amat panas dan terik sekali. Tak sanggup nak berlama di luar rumah kalau tak kerana ada urusan. Lepas mandi, masih berpeluh lagi. 

Resepi ni asalnya dikongsikan oleh Tengku Puan Pahang, Tengku Hajah Azizah Aminah dalam buku masakannya bertajuk "Air Tangan Tengku Puan Pahang". Saya sedang mencari buku ini untuk koleksi. Kalau sesiapa ada terjumpa dimana2 yang menjual buku ini, please inform saya. DH tak pernah makan puding ni walaupun lama menetap di Pahang..Jala emas pun dia tak pernah tengok..ishh..apa lagi la kita ni yang asal Johor, dengar pun tak pernah..


Jala emas ni agak leceh sikit nak buat, tapi bahannya senang aje.

RESEPI JALA EMAS

Bahan-Bahan:

15 biji kuning telor ayam kampung  ~saya guna telor ayam biasa
500 gm gula pasir  ~saya kurangkan jadi 450
1 liter air
6 helai daun pandan

Cara:

1. Asingkan kuning telor dari putihnya. (ambil telor dari peti sejok kerana mudah untuk diasingkan ketika sejuk)
2. Tapiskan kuning telor kedalam bekas, biarkan sebentar pada suhu bilik.
3. Masukkan kedalam bekas untuk dikirai seperti roti jala. Saya gunakan bekas yang dibeli di Daiso untuk simpan mayonnaise, yang bercorong halus tiga.
4. Campurkan air, gula & daun pandan ke dalam periuk, masak hingga mendidih, padam.
5. Tapis air gula tadi kedalam kuali, didihkan semula dengan api sederhana sehingga agak pekat sedikit.
6. Kirai telor tadi menjadi juraian halus jala emas. Jika air gula dah pekat sangat, tambahkan sedikit air panas.
7. Angkat dan toskan. Leraikan gumpalan jala emas dengan garfu perlahan-lahan agar tidak putus.


Original resepi dari buku: AIR TANGAN TENGKU PUAN PAHANG
RESEPI PUDING RAJA

Bahan-bahan:

4 sikat pisang lemak manis ~ dibuang kulit
1 cawan biji gajus ~ goreng dengan sedikit minyak sapi hingga perang
2~3 genggam jala emas
200 gm buah prune ~ belah 4
ceri merah /hijau
sedikit strawberry ~ saya tambah untuk kurangkan rasa manis
2 tbsp minyak sapi
minyak untuk menggoreng

Untuk Kuah puding:
Bahan-bahan:

1 tin susu cair
1 biji telor
1 tin air ~ saya suka berkuah
1 tbsp tepung kastad
4 tbsp gula ~ nak manis boleh lebihkan
1 tsp esen vanila
daun pandan ~ disimpul

Cara-cara untuk kuah:
1. Pukul telor dengan gula, masukkan vanilla, gaul rata.
2. Masukkan susu dan air, gaul hingga sebati.
3. Masukkan daun pandan.
4. Masak atas api sederhana. Kacau selalu agar tidak bergentel dan hangit.
5. Biar mendidih, padam api. Keluarkan daun pandan.

Untuk Puding Raja:
1. Goreng pisang dalam minyak panas bercampur dengan minyak sapi hingga jadi warna coklat.
2. Kedap dengan tisu untuk serapkan minyak.

Untuk menghidang:
1. Aturkan pisang goreng 2~3 lapis dalam bekas.
2. Tabur jala emas.
3. Atur prun, ceri, gajus & strawberry.
4. Tuang kuah di atasnya bila sedia dimakan.

Lepat Ubi stelo @keledek @ belebat

Dah several time buat kuih ni, tapi asyik lembik je and not as what he used to eat. I have never eaten kuih ni, so tak dapat bayangkan rasa dan macamana nak buat. 

Then, baru-baru ni I found the following recipe from the internet. Rasa macam what he described it to me, so kita pun cubalah try buat...And...berjaya juga akhirnya, ikut citarasa yang he used to eat long time ago..

Ini ialah kuih-muih dari pantai timur. Belebat atau lepat, dan ubi stelo ialah ubi keledek..Resepi dapat dari sini.
Since takde daun pisang, saya masuk dalam loyang/bekas kek je, then potong kecil-kecil. 

BELEBAT UBI STELO @KELEDEK

Bahan-bahan: 
3 biji ubi keledek - dipotong halus-halus
2 cawan tepung gandum
2 keping nisan kerek/ gula melaka
1 cawan kelapa parut
Sedikit kapur makan
Air 
Dua helai daun pisang dipotong selebar 4 inci setiap satu.

Cara:
1. Nisan kerek/ gula melaka dicairkan dengan sehelai daun pandan. Tambahkan 2 sudu gula ke dalam air manisan. Biarkan sejuk.
2. Masukkan tepung gandum ke dalam mangkuk besar kemudian tuangkan air manisan yang sudah disejukkan. Kacau sehingga sebati.
3. Masukkan sedikit air kapur. 
4. Masukkan kelapa parut dan ubi keledek yang telah dipotong halus tadi.
5. Gaul sehingga sebati.
6. Masukkan sesudu penuh adunan ke dalam daun pisang, kemudian bungkus seperti sungkusan nasi lemak.

Enchilada...


dah siap untuk di makan


Masa-masa student dulu, selalu tengok dish ni kat tv, and teringin sangat nak rasa, but, mana nak cari yang halal masa tu..and lagi la pulak nak buat pun tak tau. And bila pass by those mexican restaurant, ambik bau je la...Masa tu kat texas, memang banyak mexican food outlet, like Taco Bell etc..tak ingat dah ape ke namanya..

Sekarang ni la baru dapat merasa..itupun kebetulan jumpa recipe masa blogwalking baru-baru ni..Anak-anak tiada masaalah dengan western dish ni, walaupun masih tekak melayu, once in awhile kita tukar selera pulak. Usually in a week, I will cook one or two western dish for our meals...

Pernah dulu I cooked spaghetti with mexican cilli sauce masa tengah pantang one of the kids. My mother in law  makan, ingat I cooked mee kari....he..he

Here's the recipe for the mince beef filling and enchilada sauce, and as always, I dah ubah suai ikut bahan-bahan apa yang ada.
HOMEMADE ENCHILADA SAUCE

Ingredients:
1/4 cup vegetable or canola oil
2 tbsp flour
2 tbsp chili powder
1 (8 ounce) can tomato sauce
1 1/2 cups chicken broth
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion salt
1/4 tsp salt

Directions:
1. Heat oil in a large skillet to medium heat. 
2. Whisk in flour and chili powder. Reduce heat to medium and continue to whisk until lightly browned. 
3. Gradually whisk in tomato sauce, chicken broth, cumin, garlic powder, onion salt and salt. 
4. Stir until smooth, and continue simmering over medium heat about 10 minutes, or until slightly thickened.
5. Serve immediately, or keep in a covered bowl in the refrigerator for up to 3 days.

MINCE BEEF FILLING

Ingredients:

4 tbsp vegetable oil
400gm lean beef mince
2  oniond, finely chopped
2 garlic cloves, finely chopped
1/2 red capsicum, deseeded, cut into small pieces
1 tsp chilli powder
1 tsp dried oregano
1 tsp ground cumin
1 tsp ground coriander
1/4 cup tomato paste
1 small can baked beans
1 tomato, diced

Method:

1. Heat 1 teaspoon of oil in a heavy-based stockpot or large flame-proof casserole dish over medium-high heat. 
2. Add the mince and cook, stirring with a wooden spoon to break up any lumps, for 5 minutes or until the mince changes colour. Transfer to a large bowl.
3. Heat the remaining oil in the stockpot over medium-high heat. Add the onion, garlic and capsicum and cook, stirring, for 4 minutes or until onion is soft. Add the chilli, oregano, cumin and coriander and cook, stirring, for 1 minute or until aromatic.
4. Stir in the mince, tomato paste, baked beans and tomato. Bring to the boil.
5. Reduce heat to medium-low. Cook, stirring occasionally, for 20 minutes or until the liquid evaporates. Season with salt and pepper.

To assemble:
1. 1 packet wraps

2.Some grated cheddar cheese


3. Scoop some filling onto a piece of wrap, fold into parcels. Repeat sampai filling dan wrap habis.

4. Pour a bit of the enchilada sauce onto the base of the baking dish. Arrange all the parcels in the dish.
5. Pour some of the sauce again on top of the arranged parcel in the baking dish.
6. Toss some grated cheese on top like this.

7. Bake in a pre heated oven at 200C for about 10 minutes, until the cheese has melted and the enchiladas turns brownish.

Karipap Daging

Baru-baru ni buat karipap ni banyak sebab nak frozen kan, senang bila nak goreng pagi-pagi buat breakfast sebelum ke sekolah.

 


Balik sekolah petang, cari lagi, memang tak makan nasi kekadang anak-anak ni,

Resepi kali ni di ambil dari SINI ya.

RESEPI KARIPAP

Untuk kulit karipap:
2 cawan tepung gandum
2 tbsp majerin
1/4 cawan air ~ campur dgn sedikit garam

Cara membuat kulit:
1. Masukkan majerin ke dalam tepung. Ramas tepung & majerin hingga rata. 
2. Kemudian masukkan air yg di bubuh sedikit garam sedikit demi sedikit, uli sehingga menjadi doh. Jangan terlebih air utk mendapatkan kulit yg rapuh. 

Untuk Inti:
3 biji kentang dipotong dadu. 
200g daging cincang 
2 sudu besar rempah kari daging 
1 labu bawang besar dipotong dadu 
5 ulas bawang merah-ditumbuk 
2 ulas bawang putih -ditumbuk 
1 sudu besar udang kering-ditumbuk 
Setangkai daun sup }dihiris 
Sedikit gula & garam

Cara membuat inti:

1. Tumis bawang besar, bawang merah, bawang putih hingga kekuningan. 
2. Masukkan rempah kari, bila agak garing masukkan udang kering. 
3. Masukkan daging dan kentang. Kacau sehingga setengah masak masukkan gula dan garam secukup rasa. 
4. Sebelum diangkat masukkan daun sup.


Tips:
1. Kalau nak kentang cepat empuk dan inti cepat siap, kentang yang telah dipotong hendaklah direbus dahulu sehingga separuh masak. Baru lah di masukkan ke dalam kuali inti.
2. Goreng karipap dgn api yg sederhana supaya kulitnya licin dan rangup.

CHEESE STICKS RECIPE

Prepare basic sweet dough bun from here.
Grated cheddar cheese
Sugar

Method
1. Divide the sweet dough bun into small balls, rest for 10 minutes.
2. Flatten the dough balls and roll them into long strips as per your baking tray size.
3. Place in a baking tray, prove for 45 minutes.
4. Brush with egg wash and sprinkle with some grated cheddar cheese and sugar.
5. Bake at 190C for 12 minutes or till golden brown in the middle shelf oven.

Tiramisu

Bahan bahannya

This is a no bake eggless tiramisu. Some recipes that I found uses raw eggs to be used with the cream, but I preferred those without. You can make this cake with several varieties, such as with blueberry filling or chocolate ganache filling under the layer of cream mixtures and so on. For this entry, I used strawberry filling and strawberries for layering and garnishing. A treat for the kids and adults too...

TIRAMISU

Ingredients:
2 cups cream cheese
1 cup non-dairy whipping cream or 1 1/4 cup
1 cup coffee drink/expresso
30 sponge fingers/ or a 10" sponge cake
1/4 cup caster sugar
150 gm strawberry filling/chocolate filling
80 ml water
1 tsp icing sugar
for garnishing:
fresh strawberry fruits
chocolate shavings or powder

Method:

1. Whip the cream until stiff.
2. Whip the cheese with sugar until just mixed. Do not over whisk or the cheese will  curdle.
3. Fold the whipped cream into cheese mixture. Chill until firm.
4. Mix ftrawberry filling with water and icing sugar until combined.
5. If using a sponge cake, cut into 3 layers about 1 cm or less thick.
6. Spread a thin layer of filling mixture in a glass dish.
7. Then  lay a layer of sponge fingers (or a layer of sponge cake).
8. Spoon about 1/3 of coffee drink over the fingers to soak.
9. Spread 1/3 of the cream mixture over the fingers.
10. Repeat and end with a layer of cream mixture.
11. Sieve a thick layer of choco powder over the tiramisu/ garnish with choc shavings.
12. Garnish with some fresh strawberries.
13. Chill before serving.

Roti

Salah satu bekal untuk anak-anak ke sekolah recently.

Most of my bread recipes are from the book 'The world of bread' by Alex Goh, but I modified according to my own taste buds sometimes.

Most of them uses the following basic dough recipe, and I adjust the toppings as needed.

BASIC SWEET DOUGH BUN

Ingredients:
(A)
480 gm bread flour
120 gm plain flour
110 gm sugar
10 gm salt
20 gm milk powder
4 tsp instant yeast ~ I just used the packet yeast

(B)
1 egg
300 ml cold water

(C)
60 gm butter

Method:
1. Mix (A) till well blended.
2. Add (B) and knead to form a dough.
3. Add (C), continue to knead to form asmooth and elastic dough.
4. Cover dough with a clear film. Let it prove for 50-60 minutes, or till it doubles its size.
5. Press a finger to the proven dough. It should show a clear fingertip mark and the dough should not sink.
6. Dough is ready for making buns or bread.

SAUSAGE BUNS

Prepare basic sweet bun dough as above

Filling:
chicken sausages
mayonnaise
chilli sauce
some grated cheddar cheese

Method:
1. Divide the basic sweet bun dough into small balls, rest them for 10 minutes.
2. Roll the balls flat and put a sausage on each of them. Fold the dough to cover the sausage.
3. Slice each folded dough into 8 smaller portions. Do not cut off any portion, just like the  shape of a comb.
4. Twist first portion to the left, and second to the right. Repeat this pattern till the last portion.
5. Place the dough on agreased baking tray, and press each lightly. Prove for about 45 minutes.
6. Brush with egg wash. Pipe with mayonnaise and chilli sauce. Sprinkle some grated cheese.
7. Bake at 190C for 15 minutes on a middle shelf.
